Vegan Granola

Ingredients:

  • 1 1/2 cups rolled oats
  • 1/4 cup ground flaxseed
  • 1/8 cup chia seeds or 1/4 cup hemp seed
  • 1/2 cup raw organic pumpkin seeds
  • 1/4 cup finely shredded unsweetened coconut
  • 1/2 cup pure maple syrup

Directions:

Preheat oven to 385 degrees celcius

Mix all ingredients in a large bowl until maple syrup is coating all the dry ingredients.

In a lightly oiled baking pan (8″ x 11″) (we use coconut oil), place mixture and gently press down so it is lightly packed.

Bake for 12 minutes. Remove from oven and flip (it will break up and it should). bake for another 6 – 8 minutes until browned through.

Allow to cool completely before removing from pan.

Enjoy! It’s great over oatmeal, smoothie bowls or as a snack on it’s own.
