Ingredients (Makes 8 cookie/bites)
- 3/4 cup rolled oats
- 1/3 cup shredded unsweetened coconut
- 1/4 tsp pink Himalayan sea salt
- 2 tbsp. organic cacao powder
- 5 Medjool dates (pitted)
- 1 ripe banana
- 1/4 cup almond butter
- 1/4 cup mini chocolate chips (this is optional, it will add processed sugar to the recipe)
Preheat oven to 350 degrees Fahrenheit
Line a cookie sheet with parchment paper
In a medium bowl combine oats, coconut, salt, cacao powder (and chocolate chips if desired).
In a blender place medjool dates, banana and almond butter together. Blend on high until smooth.
Stir blended mixture into dry mixture until all ingredients are completely mixed together.
Spoon mixture into 8 mounds on the parchment paper and bake in the oven for 8 to 12 minutes until cooked though and slightly browned. The bites will be a little chewy and moist with the Medjool dates and banana.
